I made Lemon Herb Roasted Chicken tonight and not only was it low point but it was freaking delicious! Here is the recipe. To be able to get in my healthy fat/oil, I added a little olive oil to each chicken breast so that it not included in this recipe. I also put a little pepper in it too. My entire family actually loved it too, which is surprising since Collin doesn't like anything with flavor.

Lemon Herb Roasted Chicken

Ingredients

6 item(s) cooked chicken breast

1/3 cup(s) lemon juice, canned or bottled

4 1/2 cube(s) chicken bouillon cube

1 1/2 tsp dried oregano

1/3 cup(s) water

Instructions

Preheat oven to 350. Place chicken in shallow baking dish. In small bowl, combine remaining ingredients, pour over chicken. Bake 30-40 minutes or until chicken is tender, basting frequently.

The first Weight Watchers meeting went well today. I really like the leader and I left feeling really motivated and ready to do this! :) Unfortunately, I chose a really high point lunch (somewhat accidentally - I knew it was high but not that high!) but I tried to make up with a low point dinner and minimal snacking. I did get in 10 minutes on the elliptical. I wanted to do more but I am absolutely swamped from being off of work last week so I'm playing catch-up and skipping breaks.

For the first time in a long time, I'm actually looking forward to weighing in next week! :) I'm pretty embarrassed about my initial weigh-in so let me lose a few lbs. and then I'll come clean with my initial weigh in. *blushes*

By the way, almond milk is the BOMB! Yummy and guilt-free! :)

Today was a good day. I had two major temptations today. The first was at work where everyone decided to unload their holiday goodies but in order to resist it, I didn't look at the table to see what all was on it. I figured if I didn't know, then I wouldn't feel like I was missing out on anything. It worked. :) The second time was this evening. I was still hungry after dinner for some reason; I think I was probably just thirsty versus hungry since I didn't drink as much water as I'd hoped to have drank today. We still have a bit of candy/chocolate leftover from the stockings. I scoped it out once but decided that it wasn't worth it. Especially since I spent quite a bit at the grocery store on fresh produce and healthy snacks. I instead focused on making some yummy banana-oatmeal muffins for breakfast this week and getting the kitchen cleaned up. I did end up sampling the muffins though but I tracked them. After all, I had to make sure that they were edible before packing them up tomorrow. ;)

I was ready a post on BabyCenter yesterday that got me thinking about something as simple as coffee creamer. I know it seems silly but I don't want to waste points on creamer but yet I have to have it in my coffee. I decided to try vanilla flavored almond milk. I've heard good things about it plus the stuff I bought has mostly natural ingredients in it and best of all 2 tablespoons is ZERO points! :) I haven't tried it yet but I'm packing some up for work tomorrow and I'll report back with my thoughts tomorrow.

On a side note/vent, my husband if flat pissing me off. Since I was on break from school last month, I have tried to step it up by cooking more and working on keeping the house in order. He has not, although he hasn't scrapped doing everything altogether. Tonight all he did was bathe Collin and put him to bed. I did everything else, including grocery shopping on my lunch hour, cooking dinner, making the muffins, and cleaning up the kitchen. He is now sleeping on the damn couch. >_< I guess I can't complain too much because I did doze off myself for about 45 minutes tonight but by golly I got up and finished what I needed to. He's been either playing the Wii or watching football, in addition to napping. He's in for a rude awakening tomorrow. Since I didn't work on any homework tonight, he's cooking and taking care of everything tomorrow. *evil grin*

Starting back this week...

Now let's hope I can stick with it this time. My clothes are back to fitting way too tightly, I'm avoiding being photographed, and I just feel like shit. :( Time for a change.

I am excited because I only have one class to attend weekly on Thursday nights. That is only one night of temptation and with it being at 8:00 p.m., and me leaving work and heading straight to school, I've got more than enough time to stop at Subway or get something healthier.

I have also decided to start attending Weight Watchers meetings, instead of just doing it on-line. To fit this into my already crazy schedule, I've decided to attend during my work lunch hour since meetings are held a couple of times a week at the mall, which is just right around the corner from work. Plus, I'll know a few people since some co-workers have already been going for a few months. I'm still a little confused about the new Weight Watchers plan so that's another reason why I'm going.

My New Years resolutions are better time management and to focus on me. I need work on not only getting healthy (which includes losing weight) but I need to get my emotions in check and replace the bad (eating) habits with healthy habits. I'd like to focus more on spending my extra time with my sons instead of wasting time on-line or doing other stupid things.

The last thing I wanted to share was a cool find that I found through Avon, of all places - portion control serving pieces. Let's face it...it's a pain in the ass to measure out and weigh food so I thought these were super cool and they look easy to use (I haven't used them yet but I did buy them and have looked them over).
